Yummy yummy in my tum-tum-tummy

I had forgotten how great this one particular cheesecake was until a friend recently asked me for the recipe. Since then, this little goodie has been in the back of my mind. I bought the stuff yesterday to fix and thought that I'd pass the recipe along.

REGRIGERATOR CHOCOLATE CHEESECAKE

What you'll need:

  • 2 graham cracker or chocolate crusts
  • 1 tbsp of unflavored gelatin (Knox can be found with the Jell-O)
  • 2/3 cup water
  • 1 lb softened cream cheese (get the good stuff... no generic here!)
  • 6 oz. melted chocolate chips (you can do this in the microwave on 50% heat)
  • 1 cup of sweetened condensed milk
  • 1-1/2 tsp of vanilla extract
  • 3/4 cup whipped whipping cream (real whipping cream that comes in the carton. Not cool-whip)

Directions:

Soften the gelatin in the water, then heat until gelatin has dissolved, remove from heat and cool.

Cream the cheese with the chocolate, milk and vanilla. Stir in the gelatin, fold in the whipped cream. Pour into crusts and refrigerate for four hours.

Serve alone or with chocolate curls.

This is absolutely YUMMY! You'll find yourself eating the extra filling right out of the bowl.
